蛋糕仔 baby cup cake



阿仔很喜歡的一個小茶點,很久很久沒有做。時間過得很快,昨天還在家裡跑來跑去的小孩,今天已是6‘1” 的大學一年級生。

最近做了幾次給朋友和同事的孩子。這個作為小禮物很好,不太需要多時間去準備和烤焗。

48個小蛋糕的份量

90 g 室温牛油
80 g 糖
2 隻蛋
1-2 tbsp 牛奶
112 g 低根粉
6 g 發粉

牛油和糖放大碗內打至淺黃色鐘鬆軟狀。分兩次加入蛋,每加1隻時,拌勻才加另1隻。

低根粉和發粉過篩,分3次加入牛油蛋漿,每加1次時,拌勻才加另1次。加牛奶,拌勻。

將蛋漿倒入唧袋,每一紙模倒至3/4滿。

180℃焗爐焗 7分鐘。




alvin loves baby cup cakes. it seems like yesterday that he was a toddler running around, but now he is a 6'1" university freshman.

i have been baking this a lot lately,  for friends' and colleques' kids. it makes a good gift and does not need a lot of time to prepare and bake.

makes 48 miniature cup cakes

90 g butter, room temperature 
80 g sugar
2 eggs
1 tbsp milk
112 g plain flour 
6 g baking powder

cream butter with sugar until pale and fluffy. add one egg at a time and mix it thoroughly then add the next one. 

add sifted flour and use a spatula to mix well. add milk and mix well.

transfer batter to a pipping bag. fill each mini paper mold with batter.

bake at 180°c oven for 7 minutes.
